![]() Olives, Madrid-styleIngredients • 1/2 kg (1,1 lb) green or black olives • 150 g (5 1/2 oz) fresh young onions, finely • sliced • Paprika • Powdered oregano • Chopped garlic • Extra virgin olive oil • Vinegar • Salt Preparation Wash the olives in cold water and pat dry with absorbent kitchen paper accurately. Put them in a bowl and add the onions and garlic. Sprinkle with the oregano and paprika. Dress with the olive oil and vinegar in the quantity you prefer. Stir accurately and season to taste with salt. Stir again and let the mixture rest in a cool place before serving (for at least 1 hour). Back to: Madrid Recipes |
